- 6 egg whites
- ¼ Cup cottage cheese
- 1 Clove garlic, minced
- ½ Teaspoon salt
- ½ Teaspoon garlic powder
- ¼ Cup roasted red bell peppers, diced, from jar
- 4 Ounces Monterey jack cheese, shredded
- 1 Cup spinach
- green onions, diced, as garnish
Instructions
- Preheat the oven to 350 degrees F.
- Add egg whites, cottage cheese, minced garlic, salt, garlic powder, and ¾ the shredded cheese to a blender and blend.
- Set aside 2 Tablespoons of red peppers.
- Next, add the roasted red peppers and ½ the spinach and pulse 3-4 times to gently break them up.
- Lightly spray an egg mold with nonstick oil
- Add a pinch of spinach, red peppers, and cheese to the bottom of each mold. Fill each mold with eggs ¾ full.
- Next, Fill a baking dish 2” with warm water. Place egg mold into the dish. Cover with foil. Add to the oven on the center rack.
- Bake eggs for 1 hour.
- Garnish with green onions.
