  • Heat ½ tablespoon avocado oil in a large skillet over medium heat. Add spinach and cook until wilted, about 2 minutes. Remove spinach to a plate and set aside.
  • Add 1 tablespoon avocado oil to the same skillet over medium-low heat. Add egg whites and let sit, undisturbed for 3 minutes. Season with ½ teaspoon salt.
  • Carefully scramble the egg whites and cook for an additional 2 or 3 minutes, or until cooked through. Remove from heat and set aside.
  • Heat tortillas in the microwave for 30 seconds to make them pliable.
  • Spread cream cheese over the center of each tortilla. Evenly distribute egg whites, sun-dried tomatoes, and feta between the tortillas. Season with salt and pepper on top, if desired.
  • Fold in tortillas on both sides and roll up.
  • Add remaining ½ tablespoon avocado oil to your skillet and cook each wrap over medium heat for 1 or 2 minutes on each side, or until browned. Repeat until all wraps are browned.
