- 1 Teaspoon salt
- 4 Ounces cream cheese, plain, at room temperature
- ½ Cup sun-dried tomatoes, in oil, julienne cut, drained
- ½ Cup feta cheese, crumbled
- black pepper, to taste
- 6 whole wheat tortillas, burrito size
Instructions
- Heat ½ tablespoon avocado oil in a large skillet over medium heat. Add spinach and cook until wilted, about 2 minutes. Remove spinach to a plate and set aside.
- Add 1 tablespoon avocado oil to the same skillet over medium-low heat. Add egg whites and let sit, undisturbed for 3 minutes. Season with ½ teaspoon salt.
- Carefully scramble the egg whites and cook for an additional 2 or 3 minutes, or until cooked through. Remove from heat and set aside.
- Heat tortillas in the microwave for 30 seconds to make them pliable.
- Spread cream cheese over the center of each tortilla. Evenly distribute egg whites, sun-dried tomatoes, and feta between the tortillas. Season with salt and pepper on top, if desired.
