This air fryer pavlova has a crisp meringue shell with a soft, marshmallowy center, then gets topped with whipped cream and plenty of fresh fruit. I was skeptical about making pavlova in an air fryer at first, but the low temperature works really well for slowly drying the outside while keeping the middle soft. One reader told me she was skeptical too and ended up calling it a keeper. The biggest thing is giving it time to cool completely before adding the toppings.

Why You’ll Love It

This air fryer pavlova recipe uses a low cooking temperature to create a crisp meringue shell with a soft center, ready for whipped cream and fresh fruit.

Made in the air fryer: There’s no need to turn on the oven. The pavlova cooks slowly at a low air fryer temperature until the outside is crisp.
Crisp outside, soft inside: Cornstarch helps give the pavlova its characteristic soft, marshmallowy center beneath the meringue shell.
Make the base ahead: The undecorated pavlova can be made ahead and kept airtight at room temperature, then topped shortly before serving.
Change the toppings: Whipped cream and fresh fruit are an easy combination to switch up depending on what you have.

Air Fryer Pavlova Ingredients

A complete list of ingredients and amounts can be found in the recipe card below.

Egg whites: Room-temperature egg whites whip to better volume. Make sure there’s no yolk in the whites and use a clean, grease-free mixing bowl.
Cream of tartar: Helps stabilize the whipped egg whites so the meringue holds its structure. Lemon juice can be used instead.
White sugar: Add the sugar gradually while beating the egg whites rather than adding it all at once.
Cornstarch: Helps create the soft, marshmallowy center that distinguishes pavlova from a crisp meringue.
Fresh fruit: Strawberries, blueberries, kiwi and orange are used here, but you can change the fruit depending on what’s available. Dry it well before adding it to the pavlova.
Whipped cream: Add the whipped cream shortly before serving so the meringue doesn’t soften unnecessarily.

How to Make Air Fryer Pavlova

For more detailed instructions with weights and measurements, jump to the printable recipe card.

Whip the egg whites: Beat the room-temperature egg whites until foamy and increased substantially in volume, with soft peaks beginning to form.
Add the cream of tartar and sugar: Add the cream of tartar, then gradually beat in the sugar until the meringue is thick, glossy and holds stiff peaks.
Fold in the cornstarch: Sift the cornstarch over the meringue and gently fold it in with a rubber spatula.
Shape the pavlova: Spoon the meringue onto a parchment-lined air fryer tray and shape it into a circle with slightly raised edges.
Air fry: Cook at a low temperature until the outside is dry and crisp.
Cool completely: Let the pavlova cool before carefully transferring it to a serving plate.
Add the toppings: Top with whipped cream and fresh fruit shortly before serving.

Substitutions and Variations

Use lemon juice: Replace the cream of tartar with lemon juice to help stabilize the egg whites.
Change the fruit: Use whatever fresh berries and fruit you like. Strawberries, raspberries, blueberries, kiwi and citrus all work well.
Try different toppings: Add a fruit sauce, berry compote, shaved chocolate or chopped pistachios over the whipped cream.
Make mini pavlovas: Divide the meringue into smaller portions if your air fryer has enough room to keep them separated. They’ll likely cook more quickly, so start checking them earlier.

How to Store

Store: Keep an undecorated pavlova in an airtight container at room temperature for up to 1 day. Once you’ve added whipped cream and fruit, refrigerate leftovers and eat them as soon as possible because the meringue will gradually soften.
Make ahead: The best way to prepare pavlova ahead is to make the meringue base first, keep it airtight at room temperature, then add the whipped cream and fruit shortly before serving.

Top Tips

Keep everything grease-free: Even a small amount of fat or egg yolk can interfere with the egg whites whipping properly, so I make sure the bowl and beaters are completely clean before starting.
Add the sugar gradually: Don’t dump it all in at once. Adding the sugar slowly while beating helps it dissolve into the egg whites and gives you a smoother, glossier meringue.
Check your air fryer’s temperature range: This recipe needs a very low temperature, and air fryers can vary quite a bit. Make sure yours can maintain the temperature needed before starting.
Let it cool completely: This isn’t the part to rush. Moving or topping the pavlova while it’s still warm makes the delicate shell much easier to crack or collapse.
Add the toppings at the end: I wait until close to serving before adding whipped cream and fruit so the moisture doesn’t start softening the meringue.

Air Fried Pavlova FAQs

How do I know when the pavlova is cooked through?

You can gently tap the pavlova; it should sound hollow when fully cooked.

Why is cream of tartar used in the recipe?

Cream of tartar helps stabilize the egg whites and create a fluffy meringue.

What can I do if my pavlova collapses?

If your pavlova collapses, you can still enjoy it by turning it into an Eton mess or using it as a base for a trifle.

Can I cook it in the oven?

Yes. Spoon the meringue mixture onto a lined baking sheet, shaping it into a circle with slightly raised edges. Place the baking sheet in the preheated oven and bake for 45 to 50 minutes or until the pavlova is crisp on the outside. Turn off the oven and let the pavlova cool inside with the door slightly ajar for about 30 minutes. Once cooled, carefully transfer the pavlova to a serving plate. Top with whipped cream and fresh berries or fruit of your choice.

Making pavlova in the air fryer is a handy option when I don’t want to turn on the oven, but the same meringue rules still matter. Add the sugar gradually, keep everything free from grease and give the pavlova plenty of time to cool before moving it. Once it’s completely cool, add the whipped cream and fruit just before serving so that crisp shell stays crisp as long as possible.

Looked gorgeous – too much Cream of Tartar as could taste it. Use a very small teaspoonful and in fact probably a pinch is enough.
