7 Tips for Perfect Meringue

  • Fresh egg whites make the best meringue because older ones can collapse when you mix in the sugar and not rise well either.
  • Use room temperature egg whites for this bar recipe with meringue – you’ll get better volume.
  • Don’t try making meringue with packaged egg whites, as their pasteurization can stop them forming good meringue.
  • Don’t let even a tiny bit of yolk into the meringue mixture!
  • Overbeating is never good so start the mixer on a medium-low speed and turn it up a bit as you go. Finish off with a high speed. Starting with too high a speed will do bad things to the meringue structure.
  • Use a glass bowl, since plastic ones can have trace amounts of grease on, which interferes with the meringue.
  • Keep beating the ingredients until you have stiff shiny peaks. Then you know the meringue is done perfectly!
