Chicken: You can use shredded or cubed cooked chicken pieces. Grab a rotisserie chicken for even easier prep.
Yellow miso paste: Miso is a Japanese savory, salty paste that’s made from fermented soybeans, koji and salt. It adds umami flavor.
Vegetables: I used carrot and kale.
Rice vermicelli: These super-thin rice noodles cook in minutes, making them ideal for this soup.
Chili garlic paste: To add a touch of spice and a garlicky flavor.
Soy sauce: Adds a salty flavor.
Chinese five spice: There are lots of variations of this Chinese seasoning, many of which contain more than 5 spices. Star anise, fennel seeds, cinnamon, Sichuan pepper, ginger, nutmeg, and cloves are common five spice ingredients.
Lime juice: Add this when ready to serve.
Sesame seeds and green onions: Optional garnishes (I like to toast the sesame seeds first).
How to Make Miso Chicken Soup in a Jar

Make the sauce: Whisk the chili garlic paste, soy sauce, miso paste, black pepper, and five spice together.
Layer the ingredients: Divide the sauce between 4 mason jars and then add (in this order) the chicken, carrots, kale, noodles, sesame seeds, and chopped green onions on top. Cover the jars and refrigerate or freeze until you’re ready to eat.
When ready to serve: Pour boiling water into the mason jar and let it sit for a few minutes, then stir well to combine everything and add lime juice and/or salt if needed.
Substitutions and Variations
Gluten-free option: If you want a gluten-free version, ensure your rice noodles are gluten-free (most brands are).
Chicken: Tofu, shrimp or thinly sliced beef would work instead.
Soy sauce: You can use coconut aminos instead.
Rice vermicelli: Substitute soba, ramen or instant noodles. Glass noodles are good too. For a lighter version, use zucchini noodles or shirataki noodles.
Adjust the spices: Customize the spice levels by adjusting how much chili garlic paste you add. You can also add Sriracha or similar when you serve it. Or you can use a little garlic powder instead of the chili garlic paste if you don’t want any heat.
Vegetables: Include baby bok chop, baby corn, bell peppers, bean sprouts, water chestnuts, or sliced mushrooms. If you’re going to freeze it, you can also include frozen veggies.
More flavors: Add some grated ginger if you like or fresh herbs.

I find that yellow miso paste tastes best in this recipe, or you could use a mellow white miso. If you’re using white miso, you might need a little extra salt or soy sauce. Red miso has a saltier, deeper flavor, so I typically save that for roasted meat dishes and dishes that can carry such a bold flavor. Remember, the lighter the miso, the milder the flavor.
I added boiling water up to the neck of the mason jar. Add less for a stronger flavor or more if you want it more diluted. The water needs to cover the noodles so they soften.
Sure, you can either add the water to the jar and then tip the whole thing into a serving bowl, or tip the dry contents of the mason jar into a bowl, add boiling water to the jar (about two-thirds of the way up if you’re filling the jar while empty) and then pour that into the bowl, making sure it covers the noodles.

Ingredients
- ¼ Cup chili garlic sauce,
- ¼ Cup soy sauce
- ¼ cup yellow miso paste
- ½ Teaspoon black pepper, freshly cracked
- ½ Teaspoon Chinese five spice
- 2 Cups chicken, cooked and shredded or cubed
- 2 Cups carrot, grated
- 1 Cup kale, shredded
- 2 Cups rice vermicelli, uncooked
Optional Garnishes:
- 1 Tablespoon sesame seeds, toasted
- 2 Tablespoons green onions, chopped
Optional to Serve:
- lime juice, fresh
- salt, to taste
Instructions
- Whisk together the chili garlic sauce, soy sauce, miso paste, black pepper, and Chinese five spice in a small mixing bowl.
- Evenly layer the sauce, chicken, carrots, kale, noodles, sesame seeds, and chopped green onions into 4 large mason jars.
- Cover with lids and keep refrigerated until ready to serve.
When Ready to Serve:
- Pour hot water into the mason jar (up to the bottom of the jar neck, to cover the noodles).
- Leave it to sit uncovered for 3 to 5 minutes or until the noodles soften.
- Carefully stir everything together with a fork or chopsticks (be careful – the mason jar will be very hot).
- Enjoy immediately with a squeeze of lime juice if liked and extra salt if needed.
