How to Make a Kiwi Strawberry Smoothie

Make the kiwi layer: I added a banana and kiwi to the blender with coconut milk and vanilla. I also threw in some chia seeds, but you can leave those out if you don’t have any. Pulse or blend the ingredients in the blender until you have a smooth mixture. Divide it between two serving glasses.
Make the strawberry layer: You don’t have to clean the blender out before making the second layer. The top layer is a combination of banana, strawberries and coconut milk.
Garnish and serve: Sprinkle more chia seeds on top for decoration and/or add sliced strawberry and kiwi as a garnish.

Substitutions and Variations

Make more layers: If you want to get even fancier, layer half of one mixture in, then half the other, then repeat so you end up with 4 layers. Another option is to make 3 different layers. Actually you can make as many layers as you want and change the color by adding different ingredients! Perhaps try blueberries to make the pink layer more purple.
Coconut milk: You can swap the coconut milk for almond milk or oat milk. Whole milk is also fine if you consume dairy. This strawberry banana kiwi smoothie suits pretty much any type of milk you can think of. Or you could combine coconut water with Greek yogurt instead, or perhaps add a splash of orange juice.
Try different fruit: All kinds of fruit are good in a smoothie recipe and you can use a mixture of fresh and frozen. Pineapple, cherries, raspberries, mango, blueberries, blackberries, melon, peach, and pear are just some ideas. All you need to do is peel anything that needs to be peeled and discard any inedible parts like stems or seeds. Adjust the sweetness: I find the natural sweetness of the fruit is enough but you can add sugar or honey if you find the smoothie flavor tart.
Optional add-ins: Add a spoonful of protein powder for a protein boost or a scoop of ice cream to make it more decadent.

How to Store

Store: This smoothie is best served as soon as it’s made, otherwise the layers will separate. If you have some left over, keep it refrigerated, shake it up before serving (to re-mix the ingredients together) and use within 24 hours.
Freeze: I wouldn’t recommend freezing it because it won’t thaw out looking so pretty and the texture will suffer. It’s so much better freshly whipped up, although you can always freeze chopped fruit to save time making future smoothies.

You’ll see this recipe calls for chia seeds although they are an optional ingredient. Chia seeds are a superfood. They’re high in fiber and antioxidants as well as omega-3 fatty acids (great for brain health!) They digest slowly, keeping you feeling full for longer. Chia seeds are actually a member of the mint family. They don’t have much flavor so can go into breads, salads, desserts, smoothies, and more.

Is it better to use fresh or frozen fruit?

I love using frozen fruit in smoothies. It ensures they’re refreshingly chilled and saves having to add ice cubes to the mix. Keep chopped frozen fruit in the freezer and grab a handful whenever you crave a smoothie. Chopping it first means you can add only as much as you need and it’s also easier on your blender. Fruit doesn’t last so long in the refrigerator or on the countertop. But freeze it in Ziploc bags and it will keep for months.

Coconut Strawberry Kiwi Smoothie

This strawberry kiwi smoothie is a great way to boost your fruit and vegetable intake. It takes mere minutes to whip up and tastes incredible with fruit, coconut and vanilla flavors in every sip.

  • ½ banana, frozen
  • 1 Cup strawberries, frozen
  • ¼ Cup coconut milk

Optional Garnishes:

  • strawberry slices
  • banana slices
  • kiwi slices
  • chia seeds

Instructions 

  • Add the ingredients for the kiwi layer to a blender and blend until smooth.
  • Divide the kiwi mixture between 2 serving glasses.
  • Add the ingredients for the strawberry layer to a blender (you don't need to clean it out first) and blend until smooth.
  • Pour this mixture into the serving glasses on top of the kiwi layer.
  • Garnish with fruit slices and/or sprinkle a few chia seeds on top if liked, then serve immediately.
